BBQ Beer Chicken & Chocolate Chip Pumpkin Bread

It seems that lately when cooking or baking, I’ve been turning to Pinterest for my recipes. Tonight was no exception as I tried 2 recipes. I didn’t get around to the store until around 5 PM this evening so my crock pot dinner was a bust. None the less, I decided to still fix it for tomorrow’s supper. The dinner recipe was BBQ Beer Chicken courtesy of Fat Girl Trapped in a Skinny Body. Now I’ll be real honest, I do NOT like the title of that blog. AT ALL because I’m a fat girl trapped in a fat girl’s body. ANYWAYS, the recipe seemed worth trying so I gave in. Because of my TMJ issues I’ve been forced to a semi liquid/soft foods diet. Which means that I’ve been eating A LOT of soups, jello, yogurt, smoothies, and pretty much anything soft you can think of. I get tired of eating soup for 2 of my meals, so it’s forced me to be a little creative with my meals.

I chose the BBQ Beer Chicken recipe because I really wanted to break in my new crock pot that I got for Christmas. What better way than to test out another Pinterest recipe? I also had a mini stock pile of BBQ sauce that I had gotten this summer when it was on sale with coupons. Plus I still had Guinness leftover from the Shepherd’s Pie a couple weeks ago. The ingredients are simple (for exact recipe, click here):

  • BBQ Sauce – any type any flavor (I used Kraft)
  • 1 bottle of beer – any type any flavor (I just happened to use Guinness)
  • Chicken breasts (I only used 3 since it’s just me)
  • Onion powder
  • Fresh minced garlic (I used 3 cloves)
  • Paprika

I dumped the ingredients into my crock pot, set the timer for 6 hours, and let the magic take over.

I’ve also had a major attack of the sweets lately so I decided to make something to quench that craving by using ingredients I already had in my pantry. I opted to make the Pumpkin Spice Bread  that I had pinned onto my Food Porn board on Pinterest. The recipe was for 2 loaves which I didn’t want to make as I live alone and that would be just too tempting. So I had to fudge the recipe a bit to make one loaf. So here’s my recipe which I renamed – Chocolate Chip Pumpkin Bread.

  • (1) 15 oz. can of pumpkin 
  • 1 1/2 C sugar
  • 1/2 C water
  • 1/2 C vegetable oil (I used Safflower Oil)
  • 2 eggs
  • 1 1/2 C flour
  • 1 tsp baking soda
  • 2 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 bag of chocolate chips (I used Nestle Toll House morsels)

I also had to adjust the time in the oven as 60 minutes was not enough time for the loaf to bake all the way through. I would bake for 1 hour and 20 or 30 minutes. 
 
I had a sampling to see how it tasted and it was delicious! The chocolate chips was definitely a great addition and I pulled a Paula Deen and put butter on my piece. That definitely hit the spot and my sweet tooth is satiated for tonight anyway.
