Blueberry Lemon Overnight Pro-Oats

If you’ve been following me long enough, you know that I have a ridic sweet tooth and that I LOVE breakfast. If I could east breakfast for every meal, you know I totally would. So it shouldn’t be a surprise that this post is another breakfast recipe. Blueberries are in season and are one of my favorite fruits so I decided to combine them with lemon to create my newest recipe: blueberry lemon overnight pro-oats! It’s basically like blueberry pie with a touch of lemony goodness.

Overnight oats are the best because they take minimal prep time and you can grab and go in the morning for a tasty breakfast that’s quick. I’m definitely not a morning person, so I’m rushing out the door to make it on time to get to work. On the weekends it’s a different story. I’m all about whipping up something fancy like eggs or pancakes. Sadly, during the week that is not even possible. Hence the overnight oats to the rescue.

Blueberry Lemon Overnight Pro-Oats

  • Yield: 1 mason jar
  • Prep Time: 10 minutes
  • Cook Time: 8 Hours (overnight)


  • 1/2 cup blueberries
  • 1 tsp. lemon juice
  • 1/4 tsp. lemon rind
  • 1/2 cup rolled oats
  • 1 scoop vanilla protein powder
  • 1/2 cup milk of choice (I've been digging cashew milk lately)


  1. Prep the berries - Wash berries with a fruit/veggie wash. Rinse thoroughly.

  2. Combine 1/2 cup of berries, lemon rind and lemon juice. Set aside and let sit for at least 5-10 minutes.*

  3. Combine oats, protein powder and milk in a mason jar. Stir until ingredients are thoroughly mixed.

  4. Top oatmeal mixture with berries and seal jar tightly. Place in fridge overnight.

  5. Eat the overnight pro-oats cold or heat up in the microwave to desired temperature. I eat mine cold because it's hot AF here in Phoenix right now.


*I combined 3 pints of blueberries with the rind and juice of 1 lemon. I let the mixture sit for about 10-20 minutes to fully absorb and then divided the berries into 1/2 cups among the mason jars. If serving individually, use measurements for ingredients above.
