There are some weekends where food prep must be done in the least amount of time as possible due to last minute events or just plain laziness on my behalf. You know I’m being lazy when the canned chicken comes out! Normally I would go the fresh chicken route versus the canned way, but desperate times call for desperate measures! The beauty of this salad because it’s easy to make and stores well for a few days at a time. The sweet crunch of the apples and crisp grapes and the tanginess from the Lemonaise will make you wish summer was back in full swing.
2 (12.5 oz.) cans gluten free canned chicken (I used Trader Joe’s brand)
1/4 cup Lemonaise (if you can’t find this yummy mayo, you can concoct your own)
3/4 cup Greek yogurt
1 tsp. dried Oregano
1 tsp. dried Sage
4-5 fresh basil leaves or 1 tsp. dried basil
1 apple, cored and chopped into chunks (I used a gala)
1 cup grapes (I used red grapes)
3 celery stalks, chopped
1/4 cup cornichons, chopped (the fancy name for baby pickles)
Pepper to taste
Gluten Free wraps
Hot sauce (optional to put on after you’ve made the salad)
1. Drain the liquid from the canned chicken and then place in a mixing bowl. You will then want to “shred” the chicken chunks with a fork. Once the chicken is shredded, you can start adding the rest of the ingredients.
2. Add the Greek yogurt, mayo, apples, grapes, celery, cornichons, Oregano, Sage and pepper. Mix thoroughly.
3. Once you’ve mixed the salad together, you can start building your wrap. Place the GF wrap in the microwave for about 10-15 seconds to warm up. Grab a handful of spinach and spread it evenly on the tortilla. Then you will put a cup to 1 1/2 cups of salad on the bed of spinach. Top with your favorite hot sauce (if you like it hot), wrap up and prepare to eat!
