Homemade Lemon Protein Bars

So today has been one of those days where I’ve been hungry pretty much all day no matter what I’ve eaten.  I had my usual breakfast sandwich which usually hits the spot until about 11 and then I have a piece a fruit to hold me over until lunch around noon or 12:30. Lunch time rolled around and I ate my Caesar salad which didn’t do much for me either. A few hours later, low and behold, I’m hungry again. Luckily I prepared today and made some yummy lemon lime protein bars last night from a Pinterest receipe I found.

The recipe was easy to follow and didn’t require a million different expensive ingredients that a lot of the clean eating recipes require. The original recipe came from a clean eating blog called He and She Eat Clean and the bars actually have a few different variations that I’m interested in trying out once I finish these puppies up. I wanted a protein bar that was filling, yet not calorific and these bars seemed to do the trick. So as usual, I modified the recipe to fit the ingredients I had around the house. I’m going to post my modified recipe.

The Hungry Latina’s Lemon Lime Protein Bars (modified from the original Lemon Protein Bars recipe):

  • 1 cup whole wheat flour
  • 2 scoops of vanilla whey powder (I used Whole Foods generic brand)
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 2 tbsp lemon juice & juice of 2 limes (depending on how tart you want them to be)
  • 1 cup egg substitute
  • 1/3 cup Splenda brown sugar blend
  • 8 oz. unsweetened applesauce

Preheat the oven to 350 degrees and bake for 35 minutes. The original recipe called for 25 minutes, but I think that mine ended up being a lot more moist than the original one since I added a cup of egg substitute rather than 4 egg whites. My favorite part of the recipe? It has 87 calories for 2 bars! Woo-hoo! They are also very tasty and filling (the most important part) and have 9 grams of protein. After I let them cool down, I divided them up into pairs, wrapped them in saran wrap and stuck them in the fridge so they keep longer. Since they don’t have preservatives and other yucky ingredients, they will spoil faster.


I had Panda try one out and his take was a lemony flavored corn bread that needed butter and jam on top. I just shook my head. Butter and jam would totally defeat the purpose of making them healthy! But that’s what I get for letting my boyfriend try them out and give me his two cents.

This Pinterest recipe was a successful one that I will definitely make again along with other variations of the recipe like Apple Cinnamon, Cafe Mocha, Summer berries, etc.
