Helloooooo Monday! I’m actually excited to see you because in 2 days I’ll be flying to Pittsburgh to see my mama for her birfday. 🙂 Which means today is my Thursday and more than likely it’s going to be a hard work week to keep myself motivated and on track to actually do work. Shhhhh…don’t tell my manager. Haha. As I’ve mentioned before, the meal prep Monday you are seeing today was for last week as it’s easier for me to do it this way since a lot goes into a blog post. I will be doing a special edition of meal prep for those short weeks before vacation. I’m sure meal prepping before a trip is the last thing on your mind, but it’s still necessary the few days before you leave and eliminates stress when you get back from vacation. This week I wanted to keep meal simple and I was able to find a couple new recipes to try out that turned out great! I’ll definitely be making these recipes more often as they are really easy to make and taste great. I love finding recipes that are easy to make especially for meal prep since I try to maximize my time so I spend less time cooking and more time relaxing on Sundays.
Meal Prep Monday: Vol. 11
This past week I did all of my shopping at Fry’s (Kroger) as I had gotten some good coupons in the mail from them and I had some that were close to expiring. If you have a Kroger brand store near you, you should definitely check out their mobile coupons and sign up to get them through the mail. They will tailor your coupons based upon what you buy. I get coupons for free stuff all the time as well as coupons for produce and gluten free items I frequently buy. Using coupons combined with weekly sales, you are bound to save some bucks at the register. I do love saving me some money. Here’s a list of the coupons that I had for this shopping trip:
- 1 – FREE frozen vegetable
- 1 – FREE Simple Juice
- 1 – Save $0.40 on package of cherry tomatoes
- 1- Save $0.40 on 2 cans of Simply Organic beans
- 1 – Save $1.00 on any EVOL entree
- 1 – Save $1.00 on any LUVO entree
- 2 – Save $1.00 on any 2 Think Thin bars
- 1 – Save $1.00 on Simply Organic Breakfast Sausage (links or patties)
- 1 – Save $1.00 on any $5.00 natural foods purchase
I ended up saving $4.00 with manufacture coupons plus $12.77 with my Fry’s VIP card for a total savings of $16.77 or 30% off. I ended up spending $38.37 for the week in groceries in one location (yay!). While it’s not extreme couponing, I’m saving money on things I was planning on buying anyway. I just did a little research on the Fry’s app to see what coupons were available as well as the coupons they had mailed me for some great savings.
Here’s what I bought from Fry’s this past week: breakfast sausage, frozen green beans, Luvo frozen entree, EVOL frozen entree, coleslaw mix, green onions, grape tomatoes, Simply Orange juice, Tessemae’s Ranch dressing, 4 Think Thin protein bars, 4 Lara bars, 2 cans of organic black beans, Frank’s Red Hot sauce, Tapatio hot sauce, 3 avocados, tortilla chips and grapes. I was able to make 12 meals which came out to be $3.19 per meal (not including snacks).
Here’s what was on the menu for the week:
Breakfast: Strawberry Chia Overnight Oats
Lunch: Buffalo Chicken Salad Bowl
*Modifications: I used rotisserie chicken instead of cooking the chicken in a slow cooker like the recipe suggests. I also used dairy free ranch instead of a ranch packet + Greek yogurt which made my version dairy free.
Dinner: Beef Egg Roll in a Bowl
*Modifications: I used beef instead of pork and I also added rice because I LOVE CARBS. Fight me.
Snacks: Grapes & Protein bars
