Happy Monday! It’s been a crazy 2 weeks for me. I went on vacation for a week and then the past week has been bananas at work. All of sudden it got REALLY busy and I was back to work 10+ hour days. Needless to say it left little time to blog or do much afterwards since I was mentally fried. I got to leave early on Friday and it was nice to come home and relax since I had a somewhat busy weekend. I did a photo shoot with Thania from Alcazar Creative for a clothing line that I’m working with (more on that later this month!) which was so much fun! I also did some meal prep for week and some baking for another brand that I’m working with. There so many great things happening with my little blog that I’m really excited to share with ya’ll! 🙂
I’m not gonna lie…it’s been a bit difficult to get back into the swing of meal prep and eating healthy since I got back from vacation. With work being crazy and stressful the past week and a half, the binge/stress eating has been a little hard to keep under control. Lately I’ve been craving salty things like chips. In fact last week after a training session, Coach Clarence had to talk me off the ledge as I was about to hit up Sprouts for chips to eat with my dinner. I didn’t get the chips but I kept thinking about them until I went to sleep…haha.
I’ve also been struggling with overall mental energy as I’m still in a bit of a funk. Going on vacation definitely helped recharge my batteries as it did my soul good to see my family and not think about work and the stresses of life (until the last day but that’s another story). Coming back to the crazy that is my life was a little bit of a shock to say the least. I’m doing things to help out with the low mental energy and overall motivation but it’s a very slow work in progress. Every day is a struggle to get out of bed and be a functional human but I get through the day and get what needs to be done, done. Is it easy? Hell to the no. But unfortunately, this isn’t my first rodeo and this too shall pass. In the mean time, I take it one day at a time and go from there.
So back to this meal prep business. As I mentioned earlier, it’s been a bit of a struggle to get back to my normal eating habits. Then I go to Trader Joe’s yesterday and pumpkin errythang has started to invade the story. Oye to the vey. I LOVE pretty much everything pumpkin. Especially the Pumpkin O’s and seasonal baking flavors they come out with. Whyyyyyyyy must you temp me so Trader Joe’s?!?! And you know what I did? I gave into the temptation by getting a few of the delicious pumpkin treats because I’m basic. Yea. I said it. So what?! Don’t judge.
Meal Prep Monday: Vol. 12
This week’s meal prep was done at Fry’s and Trader Joe’s and I ended up spending way to much money on groceries. <sigh> This is what happens when you deviate from the grocery list. Better luck next week I suppose. I ended up spending $41.64 at Fry’s and bought chuck roast, rotisserie chicken, 2 cans of hominy, organic grapes, 6 limes, cabbage, 1 sweet potato, radishes, 1 red bell pepper and a bag of candy corn that I conveniently forgot to add into the picture. Whoopsie! Did I mention that I love candy corn? Again, don’t judge. I spent $38.45 at Trader Joe’s and bought Pumpkin O’s cereal, gluten free pumpkin muffin mix, gluten free pumpkin pancake mix, 4 packets of taco seasoning, chicken jalapeno sausage, sweet apple chicken sausage, chicken breakfast sausage, almond milk, organic spinach, ghee, tortilla chips and mints (not pictured). I ended up making 11 meals for the week and I’ll be making posole for a work potluck mid week which will be some more meals as well. I ended up spending $80.09 for the week. I’ll probably end up at around $5/per meal once the posole is made. Not bad all things considering.
What did I end up cooking this week? Here’s the menu:
Breakfast: Sweet Potato, Sausage, Pepper and Zucchini Hash
*I deviated a bit from the original recipe as I didn’t use zucchini or arugula. I ended up using spinach instead.
Lunch: One Pot Red Beans & Rice
*I made a bunch of changes to this recipe and will eventually post my version. But here’s the original recipe.
Dinner: Buffalo Chicken Stuffed Spaghetti Squash
*I didn’t stuff the spaghetti squash shell because…whyyyyy?! This recipe was super tasty. Especially with some dairy free ranch. YUM!
Mid-Week Meal: Beef Posole
*This is some tasty Posole and really easy to make. I know it’s not as authentic as it could be, but still damn tasty for this lazy cook.
