It’s Monday again?! How did the weekend fly by that fast?! If only it could go in slow mo… Hopefully you had a fun filled weekend or even a relaxing one. I know mine was fun! Now that it’s the start of a new week, here’s another installment of Meal Prep Monday! This past week was full of challenges like stress eating and not liking what I meal prepped. Sometimes I try out new recipes and then end up having a bunch of food I’m not thrilled about. <sigh> It happens to the best of us. I ended up giving into eating out 3 days for lunch last week and that doesn’t include the food eaten on 4th of July. Oye vey. Last week was not a good eating week at all. Unfortunately, things like this happen. It’s best to learn from your mistakes and make better choices the following week.
I try not to beat myself up when I make poor food choices as this is a lifestyle, not a diet. Life happens and sometimes you have to adjust. If work is stressful, find other things to do rather than eat. I’m working on that one. Sometimes I get a mad craving for salty chips or sweet treats and if I have those things in my house, I go to town. The problem is, I’ve bought certain things I shouldn’t have and then they are easily accessible in moments of weakness…aka: stressful moments. Lesson learned… DO NOT BUY Trader Joe’s chocolate coconut ice cream and gluten free chocolate chip cookies. You will eat them all. I had good intentions to just the recommended serving size…but who am I kidding?! I’m a recovering binge eater and the moment that the cookie hits my tongue, it’s on like donkey kong. Next thing I know, I’m 7 cookies deep. Oh yea. That happened. I wish I could say I was kidding, but sadly, it’s true. So I’ll say it again, next week is a new week and it will be a better week. At least that is what I keep telling myself because it will help me make better choices. You have good weeks and then you have bad weeks. Hopefully the good weeks are better than the bad weeks.
Meal Prep Monday: Vol 4.
Last week I felt like getting my shopping on so I visited Sprouts and Trader Joe’s. I also couldn’t find everything I needed when I went to TJ’s so Sprouts trip was in order. I spent $16.87 at Sprouts & $25.03 at Trader Joe’s for a total of $41.90. I ended up buying: ground turkey, edamame, organic arugula, green onions, cilantro, cherries, organic tomatoes, 3 limes, 6 mangoes, 4 sweet potatoes, 1 red bell pepper, 1 yellow bell pepper, a mini watermelon, SO Delicious French Vanilla coconut milk creamer, sweet chili sauce, organic Moroccan mint tea, chocolate coconut milk ice cream and gluten free chocolate chip cookies.
This week’s haul yielded 5 breakfast bowls, 3 Thai Turkey quinoa bowls, 5 servings of watermelon for snacks and 4 servings of jerk chicken with coconut rice and mango salsa for a total of $3.49 per meal (not including snacks). I made some bad lunch decisions this past week, but the lunches I didn’t eat can be eaten at another time so not all is lost.
Breakfast: Sweet Potato, Sausage, Pepper & Zucchini Hash (recipe coming later on this week!)
Lunch: Thai Chicken Quinoa Bowl
***Disclaimer – I didn’t follow this recipe as I should’ve and that’s probably why I didn’t enjoy it to the fullest potential. Had I used chicken instead of ground turkey, I might have liked it more. I just didn’t want to eat chicken for lunch and dinner. Ya feel me? So don’t judge this recipe off of my experience, try it yourself and see what you think! 😉 But it looks pretty, right?!
