I can’t believe another weekend has flown by just like that. The saying, “time flies when you’re having fun” is so true! I had so much fun it’s already Meal Prep Monday! While I didn’t do that many exciting things this past weekend, it’s always nice to take a break from work and decompress. I ran a bunch of errands and got my hair did. Nothing crazy, just a trim and got my grays covered up. I feel like I’m way too young to be seeing gray hairs on my head. Must be the stress…
My grocery shopping this week reflects on how lazy I was feeling when I finally figured out what I was going to make. I’ve been running pretty low on the mental energy scale this week and decided to make some easy recipes so I could kick back and relax. Once I prepped the food for the week, I caught up on Silicon Valley before watching the new episode of Game of Thrones and Ballers. HOLY MOLY GoT! I’m not going to recap the episode, but WOW. Many of you know that Trader Joe’s is my absolute favorite store to grocery shop at. They have some of the best products to make your life easy when it comes to meal prep. They also have a lot of gluten free items that are inexpensive and make trips here easy to fit in a grocery budget. I did a lot of research on Pinterest this weekend and found a lot of inspiration for my easy meals based on ingredients found at TJs. If you don’t have one near you, I feel bad for you as Trader Joe’s is AMAZING. You can come visit me and we’ll take a trip there so you can see the magical wonder of TJs.
While I love Trader Joe’s, they don’t always have everything I need so I ended up getting some things at Sprouts which is my second favorite grocery store. I like getting my veggies and bulk items at Sprouts because they usually have really good deals. This week I ended up spending a total of $58.86 (Trader Joe’s = $34.45 & Sprouts = $24.41) and bought the following items: frozen roasted bell pepper & onions, frozen organic riced cauliflower, K-Cups coffee, frozen organic jasmine rice, organic kidney beans, frozen roasted potatoes w/peppers, frozen chimichurri rice with veggies, frozen organic superfood pilaf, jalapeno chicken sausage, sun dried tomato chicken sausage, coconut milk creamer, 4 cartons of strawberries, 4 cartons of blueberries, 2 zucchini, 2 red bell peppers, 2 yellow bell peppers, 2 orange bell peppers, 4 mangoes, cherries and rolled oats. I was able to make 5 breakfasts, 4 lunches, 3 dinners, 3 mid-week meals and 5 snacks which came out to $3.46 per meal (excluding snacks).
