Meal Prep Monday: Vol. 8

It’s Monday again?! These weekends need to stop flying by so fast… This weekend was very laid back for me as I’ve been exhausted mentally. Saturday after I worked out with Coach Clarence, I came home and vegged on the couch, caught up on some shows and watched movies. The thought of going anywhere or doing anything with anyone was too much to handle. It definitely helped to have this “me time” as Sunday I felt a little better and more refreshed mentally. I really need a weekend of this the way things have been going. Unfortunately, I can’t as there are things to do like this meal prep Monday post and a few recipes that I’ve been behind on posting. So here we are…

Due to the fact that I had really low energy this weekend, I decided to keep meal prep pretty easy. Remember last week how I bought a bunch of frozen foods from Trader Joe’s? Well, they came in very handy this weekend with my food choices since I wanted things that would be quick and easy. While the food choices were easy, they didn’t all turn out like I wanted them. For example, the peanut butter chocolate overnight pro-oats I made were a complete disaster. They tasted horrible and I couldn’t even get through the whole jar. I’m not sure where I went wrong, but I tried it a couple different ways before I decided to throw the towel in and go with plan b… PB&J Overnight Pro-Oats. Unfortunately, I ran out of protein powder so they were just overnight oats sans an extra boost of protein and still tasty.

This week’s grocery shopping were done at my two favorite stores: Sprouts & Trader Joe’s. I ended up spending $9.12 at Trader Joe’s and $30.08 at Sprouts. From Trader Joe’s I bought unsweetened iced tea, frozen organic riced cauliflower and frozen roasted bell peppers & onions. From Sprouts I bought 3 mangoes, red cherries, juice, breakfast sausage, turkey cutlets and bread. I ended up making 12 meals which totaled out to be $3.26 per meal.

Breakfast: PB&J Overnight Pro-Oats

Lunch: Turkey Superfood Pilaf

Ingredients: 1 bag of Trader Joe’s frozen Superfood Pilaf, 1 zucchini, 1 bell pepper and pan fried turkey cutlets

Dinner: Chicken Chimichurri Rice

Ingredients: 1 bag of Trader Joe’s frozen Chimichurri Rice & grilled chicken thighs

Snacks: Cherries
