Roasted Potato & Sun Dried Tomato Chicken Sausage Skillet

My friend recently asked me if I had any ideas for quick and easy meals that she could throw together from Trader Joe’s as she was going to cook for a friend who was having a baby. This got me thinking and Pinterest searching for ideas. I found a couple of articles that listed the top buys from Trader Joe’s as well as quick ideas. I found out that Trader Joe’s had frozen roasted potatoes and peppers that are easily warmed up and turned into a meal or a side dish. That’s where this recipe for Roasted Potato & Sun Dried Tomato Chicken Sausage Skillet comes in. I had some extra zucchini and bell peppers that needed to be used up, so they got tossed into this skillet as well.

Trader Joe’s has great chicken sausages that are nitrate/nitrite free and affordable. One of the many reasons that I love TJ’s…it’s affordability and deliciousness. This meal took me less than 20 minutes to prepare and was a flavor bomb in my mouth. It was soooo good and I couldn’t believe how easy it was to make. So if you are pressed for time and don’t want to skimp out on flavor, this skillet is for you my friend.

If you don’t have a Trader Joe’s close by, I feel sorry for you friend. But it can be easily remedied. You can use any flavor of chicken sausage. You can usually find these at a local grocery store or health food store. The potatoes can be found in the frozen food section. Roasted Potato & Sun Dried Tomato Chicken Sausage Skillet

  • Yield: 8 cups / 2 cups per serving
  • Prep Time: 10 minutes
  • Cook Time: 10-15 minutes

Ingredients

  • 1 bag of Trader Joe's frozen roasted potatoes with peppers & onions
  • 1 package of Trader Joe's sundried tomato chicken sausage, cut into bite size pieces
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 zucchini, cut into halves
  • 1/2 yellow onion, diced
  • 1 tsp. olive oil
  • 1/2 tsp. all purpose seasoning*

Instructions

  1. Veggie Prep: make sure to wash the bell peppers and zucchini before chopping up. You will then need to cut the peppers, zucchini and onion. Set aside in a bowl.

  2. Warm a large skillet up to medium high. Once warmed, add 1 tsp. of olive oil. Add in onions, bell peppers and zucchini. Saute until onion becomes translucent. Place mixture in a bowl and set aside.

  3. In the same skillet, add the frozen potatoes. Cook according to package.

  4. Once potatoes are fully warmed up, add chicken sausage, cooked veggies and 1/2 tsp. all purpose seasoning.

  5. Serve in bowls or place mixture in reusable containers for later. Each serving is 2 cups.

*All purpose seasoning from Trader Joe's can be 21 Seasoning Salute.
